DESTILLATION UND LÄUTERUNG Calvados was born as an "eau de cidre" and is obtained from the fermentation of apples in the lower Normandy area, where there are about a hundred varieties of apples grown, but only 4 are used for the production of calvados, all carefully selected by the Giard family , owner of splendid low-yield orchards located in the heart of the Auge region. The apples, harvested manually in autumn and left outdoors to complete the maturation, are ground and pressed to obtain a juice, destined for a long fermentation in discontinuous copper stills, then aged in barrels for 30 years
