All of our production is centered on the Classic Method, a production process that consists in inducing the refermentation in the bottle of wines through the introduction of selected sugars and yeasts.
The natural temperature fluctuations of this altitude can allow a natural and peaceful aging of the wines. It takes at least 24 months to give Arunda sparkling wines that richness, elegance and complexity that made them famous. Some Cuvées rest in the cellar for up to 60 months before the bottles are, as per tradition, opened and sent for sale.
