DISTILLATION AND REFINING: the Fratelli Brunello distillery has always used a discontinuous direct steam system, one of the few still in operation, with low pressure and low temperature, composed of 4 strictly copper boilers, as tradition dictates. The distillation cycle is very slow and involves the processing of small batches of marc (cooked) whose duration is about an hour and a half, after distillation it is left to rest for at least two years in inert steel containers. Subsequently it is transferred to the fiscal warehouse where it will age in barrels, new and second pass, in Allier oak of 350 liters, for over twelve months. During this period the magical alchemy of the slow and gradual transfer to the grappa of the color, the aromas and the toasting of the wood takes place
