DISTILLATION AND REFINING: The Fratelli Brunello distillery has always used a discontinuous direct steam system, one of the few still in operation, with low pressure and low temperature, composed of 4 strictly copper boilers, as tradition dictates. The distillation cycle is very slow and involves the processing of small batches of pomace (cooked) whose duration is about an hour and a half, after having rested at least 12 months in inert steel containers, to improve the gustatory softness, the grappa is transferred to the fiscal warehouse where it will age in barrels, new and second pass, in 350 liter Allier oak, for over 3 years. During this period the magical alchemy of the slow and gradual transfer to the grappa of the color, the aromas and the toasting of the wood takes place
