DISTILLATION: For this grappa Corvina, Corvinone, Rondinella and other autochthonous grapes are used where the grapes are pressed from late January to early February, to produce the noble Amarone. After fermentation (40-60 days), the pomace is separated from the wine, placed in special closed containers and immediately destined for distillation to preserve all their qualities, a discontinuous direct steam system is used, among the few still in operation, duct at low pressure and low temperature, composed of 4 strictly copper boilers, as tradition dictates. The distillation cycle is very slow and involves the processing of small batches of vinaccia (cooked) whose duration is about an hour and a half. The Amarone Grappa is bottled after three / four years of maturation, in inert steel containers , maximizing all its organoleptic qualities
