DISTILLATION AND REFINING: The distillation cycle is very slow and involves the processing of small batches of marc whose duration is about an hour and a half, after resting for at least 8 months in inert steel containers, to improve the gustatory softness, the grappa is transferred to the fiscal warehouse where it will age in new and second passage barrels in 350 liter Allier oak
