DISTILLATION AND REFINING: For the correct conservation of the pomace, Grappasystem® is used, an innovative fermentation system through which the pomace is planted in a tunnel of plastic food film designed by Roberto Castagner. This system includes the use of selected oenological yeasts which, by fermenting the residual sugars and consuming all the oxygen, develop alcohol and carbon dioxide: in this way the internal environment of the big bag remains perfectly healthy, guaranteeing the best protection of the marc and above all of aromas. The marcs are then smoked before distillation. The marcs are distilled with stills of our own design. The final blend at 58 ° alcohol is kept in new cherry barrels for the first six months, while for the following period new and barriques are used. used oak of different origin with medium toasting. Since the wood has a porous and non-waterproof structure, to compensate for the loss of evaporated product every six months a top-up with grappa of the same quality is made. At bottling the distillate is brought to a final alcoholic strength of 40 °. Grappa aged in barrique for over three years
