DISTILLATION AND REFINING Calvados is an apple cider brandy, produced in the French department of Lower Normandy, in the Pays d’Auge region. The fruit is ground and pressed, then squeezed to produce a juice that is distilled and aged in oak barrels for at least 4 years, for this Calvados four of the many varieties of apples grown and harvested in autumn are used to obtain a juice that is made ferment for a long time in discontinuous copper stills
