DISTILLATION AND REFINING At "The Positos Ranch" of the "Distileria la Fortuna" in Jalisco, Mexico, only the native Agave Blu is used to produce this Tequila rich in myth and history. The origins of the distillery date back to the end of the 19th century and the distillation recipe was handed down through five generations. Herencia uses agave plants at the height of maturation (at least 7 years) and once its leaves are removed, the piñas are then placed in small brick kilns where they are steamed for at least 28 hours. After cooking, the piñas are carried by hand to the mill where they are pressed and undergo a three-step process that extracts only the first agave juice. The juice is then placed inside a 6000 liter tank, to then carry out the natural fermentation which lasts about 72 hours. The resulting must is divided into three parts, the head the heart and the tail. The heads and tails are discarded while the heart is placed inside a small copper still. Once distilled, the resulting liquid is aged for 9 months in white oak barrels that previously contained Jack Daniel
A PIECE OF ADVICE … The traditional way to taste tequila is to serve it in an earthenware glass accompanied with salt and lime juice placed on the back of the hand. This would go particularly well with the basically herbaceous and dry flavor of the distillate. The tequila is combined with various typical Mexican dishes. Another way to consume tequila, also well known outside of Mexico, is in the preparation of the Tequila Bum Bum cocktail, diluted in a glass with 1/3 of tonic water, beaten a couple of times on the table (hence the name ) and finally swallowed in one go
