DISTILLATION AND REFINING Rhum Rhum Liberation 2024 is a Pure Single Agricole Rum produced from an ancient sugarcane variety, Rouge B47.259, which has almost disappeared from the Antilles. Once perfectly ripe, the canes are cut by hand with traditional "coutelas" and transported to the distillery on "cabrouets" pulled by bulls. The freshly pressed juice is not diluted, as is customary in the production of agricultural rums. Fermentation takes place in open, temperature-controlled vats and lasts up to 5-6 days. After distillation, a long period of maturation begins in steel vats, lasting up to about a year, during which the alcohol content is slowly reduced. Finally, the rum is aged in French oak barrels that have held some of the finest wines from France's greatest crus. All Liberations bear the year of "liberation" from the barrel on the label,This version was bottled at 56° (that is, at "full" alcohol content)
