PRODUCTION AND REFINING Saba is an ancient condiment obtained from a must of grapes that are produced in the suggestive Reggio hills. This must is cooked directly over low heat until evaporation of about one third of the initial volume
A PICE OF ADVICE... Its sweet and characteristic taste makes this condiment the ideal accompaniment to polenta, yogurt, ice cream and panna cotta (typical Italian dessert) or to flavor cakes and biscuits. Saba also harmonizes with medium-aged cheeses or with a glass of frash water as a thirst-quenching drink, to be tried with legume-based risottos or soups. In the past, during the winter snowfalls it was customary to pour this syrup into a glass of snow, thus obtaining a tasty ice water
