VINIFICATION AND REFINING according to the vintages, the soft crushing of the grapes takes place from the end of January to the beginning of March, and the fermentation in small truncated cone-shaped steel barrels at a controlled temperature starts with the activity of autochthonous yeasts to better highlight the organoleptic specificities of the “cru "Scarnocchio. Fermentation is slow, with a long maceration of the skins, to allow maximum extraction of the complex aromatic and typical polyphenolic heritage. Once the alcoholic fermentation in steel is completed, the wine passes directly into oak barrels and barriques where it completes the malolactic fermentation. After the summer racking, the Scarnocchio Amarone refines again, for at least 24 months, in 30 hl oak barrels for about 90% and a remaining 10% in oak barrels, before being bottled. After bottling, the wine is aged for at least 14 months in the bottle before it is marketed
