VINIFICATION AND REFINING The vinification with a slight over-ripening of the grapes on the plant that allows to obtain a greater concentration of sugars and polyphenols inside the grape, once collected and selected manually in small boxes, the bunches are de-stemmed and placed inside of winemakers, where a fermentation process is started in contact with the skins lasting 8 days, we proceed with the racking to separate it from the lees, then the wine completes the fermentation in steel vats, maintaining a slight residual sugar which gives a natural softness to the product, after fermentation it rests for at least ten months in steel tanks and for a small percentage in oak tonneaus and finishes its refinement in the bottle for almost a year
