VINIFICATION AND REFINING Ziggurat is produced with selection of grapes from different vines, the cold pre-maceration fermentation temperature is 12 ° C for 20 hours, while the maximum fermentation temperature is 26 ° -28 ° C in stainless steel, the period maceration takes 15-20 days, while aging lasts 12 months in 225 liter barriques and 500 liter tonneaux, followed by a minimum of 6 months in the bottle
