The Barolo Cappella di Santo Stefano is a historic vineyard, one of the oldest in the Langhe, having been owned by the Vatican. Through the Vatican registers we know that the vineyard has certainly been cultivated on this site since 1200. In fact, on the top of the hill there is a country chapel from that period of Romanesque construction. The soil has a limestone base, but it is the sand that develops a much broader bouquet in this wine, thus finding constantly evolving aromas.
VINIFICATION AND REFINING Selection of the grapes, fermentation at controlled temperature for about 21 days in contact with the skins, first passage in cement then long aging in wood. After bottling, further refinement in glass, aging potential of over 30 years
