    VINIFICATION AND REFINING Harvest between the last ten days of September and the first of October according to the vintage, strictly manual harvest, the grapes after a careful selection are left to rest in the loft for a period ranging from 3 to 4 months in boxes, taking care of the spacing between bunch and bunch to favor the correct and better drying.
