VINIFICATION AND REFINING The grapes are harvested manually and processed in the cellar where they are crushed and de-stemmed, followed by fermentation of the must in stainless steel vats at a controlled temperature, without adding yeasts, fermentation takes place with 3 or 4 air pumping over performed daily, then the phase of malolactic fermentation, where at the end the refinement begins, which takes place in tonneaux with a capacity of 500 liters, where they remain for a period of 48 months, before being placed on the market, followed by a brief refinement in the bottle
