VINIFICATION AND REFINING This Refosco dal Peduncolo Rosso is produced with grapes harvested manually in small crates where the bunches are then delicately de-stemmed and fermented with maceration on the skins in stainless steel containers at a controlled temperature for a period of about 3 weeks, followed by crushing and the consequent racking, after the wine is aged for 12 months in French oak barriques, further maturation in the bottle for a further 4 months in thermo-conditioned rooms before being marketed
