    VINIFICATION AND REFINING After careful manual harvesting, the must is vinified in stainless steel tanks with the contribution of indigenous yeasts, careful control of the fermentation temperature, which never rose above 28/30°, as well as frequent manual pumping over, have given this wine a beautiful ruby color as well as strong varietal aromas of the area. The maceration in contact with the skins lasted for approximately 24 days at the end of which the native bacteria developed the transformation of malic acid. Once the malolactic fermentation was completed the wine passed into second passage French oak barriques, without therefore using of new wood. The refinement lasted for approximately 12 months, after which the wine was bottled in late spring
