VINIFICATION AND REFINING After careful selection and manual harvesting, vinification takes place induced by indigenous yeasts and separated by variety in steel tanks at a controlled temperature between 30/33°, with manual pumping over with a total stay (cuvaison) of 22 days for Sangiovese, 25 days for the Merlot and 26 days for the Malvasia Nera, after racking, the wine underwent malolactic fermentation in barriques, where at the end of the malolactic fermentation the blending of the three varieties took place, subsequently the wine passed into oak barriques to fine grain, 22% new for approximately 14 months
