    The Pruviniano Collection by Domìni Veneti was born from the desire to discover and enhance the territories and wines coming from grapes grown in the Marano valley in Valpolicella Classica. Until 1177 these territories were in fact called Pruviniano

    VINIFICATION AND REFINING The harvest takes place between September and October with exclusively manual selection, proceeding with drying until December/January in the fruit cellar, then pressing at the beginning of February with destemming of the grapes. Fermentation temperature from 12 to 23 °C. after which slow maceration takes place for 30 days, of which 12 are cold, manual pressing is carried out with a frequency of 3 per day, complete malolactic fermentation takes place, ending with aging in wood then in the bottle for about 3 years, natural stabilization
