VINIFICATION AND REFINING Harvest has always been strictly by hand at the first light of the morning when the temperature of the air and of the fruits are cooler to preserve the crunchiness of the skin, technology is used here and is represented by "teardrop" vinification, that is, the use of pure flower through the static draining first fermentation, thus obtaining a must that can be considered the "heart of the grape". The must ferments and rises in old 400lt white oak tonneaux for about 24 months, then rests in the bottle for another two years
