VINIFICATION AND REFINING The "Schweizer" by Franz Haas is produced with carefully selected grapes and not all the vintages, harvested by hand the grapes are taken to the cellar for a delicate destemming-crushing followed by the alcoholic fermentation that takes place in stainless steel containers controlled temperature with frequent pumping over and punching down. After malolactic fermentation, which also takes place in steel containers, the wine is left to age for 12 to 15 months in French oak barrels before being bottled for about a year before being marketed
