VINIFICATION AND REFINING Manual harvesting of selected bunches in the second half of September, with slow drying in the fruit cellar until January, followed by pressing and destemming of the dried grapes, fermentation at a controlled temperature of 24°C, followed by maceration of the must for 25 days, with daily pumping over and punching down, malolactic fermentation takes place, maturation ends in tonneaux and part in large barrels for 30 months, ends with further refinement in the bottle for 12 months before being marketed.
FOOD MATCHING Born as a pleasure for meditation at the end of a meal, but at the table with very fat and demanding dishes such as game and aged and very spicy cheeses, it is enhanced with stews or braised meats
