VINIFICATION AND REFINING Manual harvest, with the bunches being selected in the vineyard and picked by hand, destemmed and pressed. The resulting must is sent for fermentation at a controlled temperature. Once alcoholic fermentation is complete, the wine remains in contact with the skins for approximately 15-20 days. This is followed by racking into concrete tanks to facilitate decantation, where malolactic fermentation will subsequently begin. The wine ages for 27 months in 50-hectoliter French oak barrels
