VINIFICATION AND REFINING ( Vinification: In white, in pneumatic press with separation of I and II squeezing. After 12 hours of settling at 13 ° C, inoculation of selected yeasts for fermentation starts in stainless steel tanks at controlled temperature and partly in small oak barrels (30%). Malolactic fermentation and decanting precede the assembly of the Cuvée which in March, added to the "draft syrup", is bottled, capped with the crown cap and laid down in a stack for foaming. Maturation and aging: The stacked bottles remain at least 24 months in the rooms of the seventeenth-century cellars before the "remuage". Subsequently blown and dosed "Brut" receive the mushroom cap and the cage. At least two months of further refinement is finally necessary before placing this Franciacorta on the market
