    A fragrant rosé where the delicate freshness of Chardonnay is completed with the fruity richness of Pinot Noir and the smooth roundness of Pinot Blanc

    VINIFICATION AND REFINING Vinified in rosé for Pinot Noir grapes, with a few hours of maceration to give the characteristic pink color to the Cuvée, Chardonnay and Pinot Bianco are vinified in the traditional manner, in a pneumatic press with separation of I and II squeezing. Fermentation and subsequent refinement of about 7 months take place partly in temperature-controlled steel tanks (80%) and partly in small oak barrels (20%) where malolactic fermentation also takes place. The stacked bottles remain at least 20 months in the rooms of our seventeenth-century cellars before the "remouage", then disgorged and dosed "Brut" receive the mushroom cap and the cage. At least two months of further refinement is finally necessary before placing this Franciacorta on the market
