VINIFICATION AND REFINING The Cuvée Prestige base wines are obtained by applying a strict wine-making protocol. The hand-picked grapes are codified vineyard by vineyard, cooled in a cell and, before being whole pressed, they are selected by expert eyes and hands. Alcoholic fermentation takes place in temperature-controlled steel tanks, where the wines remain until the following March. Seven more months of aging are necessary for the wine to clear itself, to mature and to bring out the character of the vineyards of origin. Subsequently, the wines are expertly assembled to noble reserve wines of the best vintages (from 20 to 30%) in the "magic ritual" of the creation of the cuvée. This particular technique gives the Cuvée Prestige a distinct personality. The essence of Franciacorta in the Ca ’del Bosco style. Only after an average aging on yeasts of 25 months this Franciacorta can express all its wealth and identity. The dégorgement takes place in the absence of oxygen, using a system that is unique in the world, designed and patented by Ca ’del Bosco. This avoids oxidative shocks and further addition of sulfites.
