VINIFICATION AND REFINING Manual harvest in small boxes, the grapes are cooled and subjected to a selection of the bunches, followed by a direct soft pressing of the whole grapes, after the spontaneous decantation of the must, the fermentation is started in steel tanks, to then continue in French oak barrels (20% of the grapes) at indirectly controlled temperature, with air conditioning of the environment. Fermentation is carried out by indigenous yeasts and with a minimum use of sulphites. Adding fresh must, always obtained from Grillo grapes of the following vintage, present in the same vineyard and following the same method for the vinification of the base wine. The fresh must is added to the wine in proportional quantities so as to dilute the alcohol content and bring the quantity of sugar (natural) necessary for the foaming. The addition of must does not exceed 15%, so the wine is fully included in the category of vintage wines
