Sparkling wine fermented in the bottle with the ANCESTRAL METHOD. The name attributed to this method expresses its ancient origins and its link with a tradition and an experience handed down from generation to generation. In the absence of adequate technologies, it was nature that dictated the times of wine: the last residual sugars, in hibernation during the winter, at the first spring heats could turn into alcohol resulting in a natural refermentation in the bottle. All this in order to bring out the best qualities and aromas of our wines.

VINIFICATION AND REFINING After a maturation of several months on its own yeasts, the sediment that has formed is removed, after a manual movement (Remuage) and a disgorgement (Degorgement) made without refrigerating (A la vollee) with a particular machine studied by us (the ZERO is therefore referred to the absence of sedimentation)

FOOD MATCHING Recommended in hors d'oeuvres of cured ham and cured meats, omelettes, mushroom risotto, meat-based pasta, stewed or baked fish, fish soup
