Sparkling wine fermented in the bottle with the ANCESTRAL METHOD. The name attributed to this method expresses its ancient origins and its link with a tradition and an experience handed down from generation to generation. In the absence of adequate technologies, it was nature that dictated the times of wine: the last residual sugars, in hibernation during the winter, at the first spring heats could turn into alcohol resulting in a natural refermentation in the bottle.All this in order to bring out the best qualities and aromas of our wines.
VINIFICATION AND REFINING After a maturation of several months on its own yeasts, the sediment that has formed is removed, after a manual movement (Remuage) and a disgorgement (Degorgement) made without refrigerating (A la vollee) with a particular machine studied by us (the ZERO is therefore referred to the absence of sedimentation)
