VINIFICATION AND REFINING Annamaria Clementi is the fruit of the pursuit of excellence, both in the vineyard and in the cellar. The base wines are obtained exclusively from very pressing musts. Alcoholic fermentation takes place exclusively in small oak barrels, obtained from selected woods and aged for at least 3 years. Here the wine remains on its own lees for another 6 months, during which time malolactic fermentation takes place. No compromise, no concession: only the wine from the best barrels, from the 29 base wines of origin, is tapped to give rise to the Annamaria Clementi. A pair of flying tanks transfers it by gravity, from the barrels to the assembly tank. A very long aging in contact with the yeasts, which lasts for more than 8 years, determines its unique properties. An absolute Franciacorta. The dégorgement takes place in the absence of oxygen, using a system that is unique in the world, designed and patented by Ca ’del Bosco. This avoids oxidative shocks and further addition of sulfites. Aging minimum 9 years on yeasts
