VINIFICATION AND REFINING Lambrusco "Vigna Rosa" is produced by Fangareggi with Lambrusco di Sorbara, Fortana and Pinot Nero grapes which are harvested by hand with selection of the best grapes in the vineyard, after soft pressing and vinification with a short fermentation on the skins, proceeds to the fermentation of the must, the base wine is then transferred to an autoclave for the second fermentation and refermentation with a long Charmat method, with a rest on the lees for a few months
