VINIFICATION AND REFINING After a manual harvest, the white wine is made with whole grapes and soft pressing, where the first fermentation is with static settling, at a controlled temperature, aging for about 3/4 months or more in stainless steel tanks. The second fermentation obviously takes place in a 25 hl autoclave, Martinotti method (charmat) for 40 days
