VINIFICATION AND REFINING Obtained from a blend of Chardonnay and Pinot Noir (vinified in white) grown in the hilly vineyard of Riccò di Serramazzoni (Modena), at 650 meters above sea level on the Modena side of the Tuscan-Emilian Apennines, obtained from the careful vinification of the best grapes harvested exclusively by hand in 15 kg boxes, where the bunches are treated with care to avoid any damage during transport and arrival at the cellar. The grapes are softly pressed and only the free-run must is fermented in steel vats at a controlled temperature. The following spring, the sparkling process takes place according to the traditional classic method of refermentation in the bottle. After a wait of at least six months, carefully selected yeasts are added and bottled. Once the refermentation is complete, the bottles remain horizontally for more than 24 months
