VINIFICATION AND REFINING The grapes are harvested by hand at the end of August, cooled, and immediately soft-pressed. The first fermentation occurs after 2-3 days of decantation and ferments at a maximum temperature of 15°C. The rosé wine is refermented in the bottle, where it remains in contact with selected yeasts for at least 3 years. After this, the bottle is disgorged with the addition of liqueur d'expedition and is ready for consumption after 2 months
