VINIFICATION AND REFINING Barolo chinato is an aromatized wine, produced by adding to the Barolo DOCG of sugar and ethyl alcohol in which previously several spices (formerly called drugs) have been placed in slow maceration at room temperature, including the bark of China calisaia, rhubarb root and gentian, and cardamom seed, in order to extract the aromatic components. Aromatization is followed by aging in barrels for about a year
