VINIFICATION AND REFINING Chip Dry is obtained from selected dry white ports produced from grapes grown in the Douro Superior (the eastern part of the Douro valley), although different varieties of white grapes are used, Malvasia Fina grape predominates, this White Port Chip Dry is produced using the traditional method of vinification of port wine, adding brandy to the must to stop fermentation and preserve part of the natural sugar of the grapes in the finished wine, in this case Chip Dry, the brandy is added later, when much of the sugar it has been converted into alcohol, producing a port of unusual dryness, the individual wines are aged separately in oak vats for a period of between four and five years and are therefore mixed just before bottling to give balance and character
FOOD MATCHING ideal cold as an aperitif, it can also be drunk poured on ice in a glass, filled with tonic and a fresh mint leaf, accompanied by salted almonds or olives, it is the perfect aperitif
