VINIFICATION AND REFINING Manual harvest returning to the same vines several times in relation to the presence of noble rot on the individual bunches. Bunches selected in the cellar before being crushed. After pressing, the must ferments for 18 days at a temperature of about 17 ° C. The sweet wine is introduced into French oak barrels where it rests for 6 months before being assembled for a few months in steel vats before bottling. The Muffato della Sala is produced with grapes affected by noble rot harvested at the beginning of November, to allow the morning mists to favor the development of Botrytis on the bunches. This mold reduces the water content of the grapes, concentrates the sugars, favoring the development of aromas that give the wine a harmonious and unmistakable taste. The first vintage was 1987 whose composition included Sauvignon Blanc (50%), Grechetto (30%) and Drupeggio (20%). Subsequently, the composition has changed up to the current one
