VINIFICATION AND REFINING The grapes, due to the different maturation periods, are harvested and processed separately, the Chardonnay and the white Sauvignon are fermented in barrique, while the riesling, the gewürztraminer and the kerner ferment in steel tanks, with the final fermentations, the wines young people are assembled to favor the combination and harmonization of the different aromatic components, after a period of ten years on fine lees, the wine is bottled and further refined in the bottle for a few months
