VINIFICATION AND REFINING The must after a short period of maceration (contact with the skins) is fermented at low temperature in steel tanks. Later, the wine matures on yeasts with frequent battonage (keeping the yeast in suspension) for about six months before bottling. Gewürztraminer reaches its complete evolution only after several months of maturation in the bottle
