VINIFICATION AND REFINING Harvest harvested from vines of 25 years of age cultivated in biodynamics, destemming and spontaneous fermentation in truncated oak vats in contact with the skins for 8-14 days without temperature control and with 3-4 manual punching down per day, all without clarification or filtration and with minimal presence of sulfur dioxide: 20 mg / l, final aging for 18 months in oak barrels
