VINIFICATION AND REFINING Grapes harvested from high altitude vineyards, where the must is most fermented at controlled temperature in steel tanks and partly in barriques, before bottling, the wine remains on the lees for about five months in order to acquire complexity and fullness. Pinot Blanc needs at least three or four months of bottle aging to express its typical bouquet and complexity characteristics
