VINIFICATION AND REFINING Accamilla is a macerated white wine as tradition does not involve the separation between the solid part of the grape and the must during the vinification of the bunches, the grapes are mainly Malvasia di Rapolla, Santa Sofia and Cinguli. The grapes are de-stemmed and sent to traditional chestnut vats to carry out the alcoholic fermentation, which occurs spontaneously in contact with the skins for 18 days, after a light pressing, the wine does not undergo clarification and filtration, and the refinement takes place for a period of 2 months in French oak tonneaux
