VINIFICATION AND REFINING The Friulano grapes are grown mainly with Guyot, the vines have their roots in Ponca (flysch of Cormòns in technical terms), a soil composed of marls and sandstones of Eocene origin stratified under the seas over the millennia, which gives the wine flavor. and unique minerality, harvest is carried out during the second half of September where the healthy and perfectly ripe grapes were harvested by hand, in small boxes, to preserve the integrity of the berry, delicately de-stemmed and left to macerate for a short period, it was then softly pressed, and the must thus obtained is clarified by decantation, followed by fermentation at a controlled temperature in stainless steel containers, at the end of fermentation the wine was kept for a few months on the lees, to increase its complexity, creaminess and vocation for aging, once bottled, it rests in thermo-conditioned rooms for refinement
