VINIFICATION AND REFINING The grapes are harvested manually in crates which are followed by crushing and soft pressing. Alcoholic fermentation takes place in steel tanks. The wine is bottled at the end of spring. Thanks to the low fermentation temperature, the yeasts block their fermentation activity leaving a residual sugar of about 5/6 grams per liter
