VINIFICATION AND REFINING The harvest is determined on the basis of periodic checks of sugars, acidity, aromatic maturity and tasting of the grapes, followed by vinification with soft pressing and separation of the different fractions of the press, static decantation at 14°C for 24-36 hours. Fermentation in stainless steel tanks at a controlled temperature of 18-20°C, final refinement for 6-8 months in contact with the fermentation yeasts periodically kept in suspension

A PIECE OF ADVICE... Excellent as an aperitif, it goes very well with appetizers, light pasta dishes, velvety vegetables or fish-based dishes, the combination with mushroom preparations is spectacular
