VINIFICATION AND REFINING The harvest is determined on the basis of periodic checks of sugars, acidity, aromatic maturity and tasting of the grapes, followed by vinification with soft pressing and separation of the different fractions of the press, static decantation at 14°C for 24-36 hours. Fermentation in stainless steel tanks at a controlled temperature of 18-20°C, final refinement for 6-8 months in contact with the fermentation yeasts periodically kept in suspension
A PIECE OF ADVICE... The blend of wines that compose it make it a classic for fish and cooked or mpura vegetables, fried fish, breaded and fried sardines and anchovies, raw fish, oysters and sea truffles, also ideal as an aperitif, given its lively backbone.
