VINIFICATION AND REFINING Bellone ‘Radix’ originates from only Bellone grapes grown on sandy soils in the municipality of Anzio, the bunches are subjected to a short skin maceration in 400-liter open tonneau and placed vertically, aimed at maximizing the extraction from the skins. The maceration takes place for 2 days and is associated with spontaneous alcoholic fermentation lasting 2 weeks, without temperature control and without carrying out malolactic fermentation. Always in tonneau the mass remains to mature on the fine lees for about 24 months, followed by a few months of rest in amphorae that allow the wine to breathe, the refinement ends for at least 6 months in the bottle before the final marketing
